Folk Techniques
Chidori Manju is a confectionery first produced by the Chidoriya shop in 1927 (Showa 2). It is the flagship sweet of the shop, born out of the traditional castella and maruboro that they have continued to produce. Chidori Manju is a baked sweet bun in which white bean paste is enwrapped in castella, using the Nanban confectionery baking methods.
