Hikigama

The hikigama is an oven unique to Japan in which the flames of a charcoal fire are directed from both above and below. It was used in the production of oven-baked Nanban confectioneries such as castella as well as the baking of ikkokko, a sweet originating in China, which did not have a culture of oven use.
