Nagasaki City, Nagasaki Prefecture
Folk Techniques
Kosako is a dry confectionery made from a powder produced by roasting non-glutinous rice and sugar. It is said that a Nagasaki woman called “Oume” learned from the Chinese how to make it during the Kan’ei era (1624-1644), and the sweets are often in the shaped of plum blossoms.
