Kangiku is a type of dry confectionery said to have arrived in Japan during trade with China during the Kan’ei era (1624-1644). This variety of rice cake whose name literally means “cold chrysanthemum” was once called “sweet chrysanthemum.” The dried rice cakes are left stored for between six months and a year, then grilled and coated with sugar syrup.
