					The Nagasaki Kaido is a road running from Kokura to Nagasaki with a length of 57 ri (about 228 km) and 25 post towns. During the Edo period (1603–1868) the sugar and culinary culture brought from the West and China through interaction with foreign nations introduced to the various places along the road created a unique food culture that retained ties with the established culture and features of those days.
